I love this because it's rich and luscious. The kind of flavor and taste that makes you close your eyes with pleasure. Make this with organic ingredients because it'll taste that much better (it's really worth it.)

1 pound organic chocolate chips (my favorite are Tropical Source because these are European quality bittersweet and contain some tofu powder too!)

2 cups heavy cream (make sure this is the old-fashioned kind, no preservatives, no stabilizers)

6 eggs

1 1/2 tsp vanilla

Place chips in food processor. Gently bring cream to a boil. Turn on processor and slowly pour in cream. Add eggs and vanilla and process about 30 seconds.

Pour mousse into individual pretty pot de creme cups or into a serving bowl. Refrigerate for several hours or overnight.

(Note: I used to use only egg yolks -- but then thought why have that jar with egg whites sitting in the frig? This works just as well. For those worried about using raw eggs -- first, these are organic from organic chickens whose immune systems are stronger and healthier, second, the boiled cream takes care of bad bugs, so the eggs aren't really raw.)
